Dual wielding two uchigatanas actually makes for faster attacks if you alternate left and right. I'd really only recommend Tearing if you are just going to breeze through quickly and not focus on high levels due to Tearing being easier to access. I normally just use a Tearing+5 weapon until Sharp+5 is achieved.

I suggest just going normal path, especially if you are planning on making a Crushing Claymore. At 30/30 and max upgrades the regular and quality Uchi have the same AR.
